Carrot Cake Muffins 🥕

Is there anything better than sitting down with a cup of tea ☕ and a freshly baked muffin? 

Make the Easter Bunny 🐰 jealous this weekend by getting the kids to cook up these deliciously scrumptious healthy carrot cake cupcakes! 😋


1 1/2 cups of wholemeal flour
1/2 tsp baking powder
3/4 tsp salt
1 tsp cinnamon
1/3 cup of maple syrup
1/3 cup coconut oil 🥥
2 tsp apple cider vinegar
2 eggs 🥚
2 tsp vanilla extract
1/3 cup milk
1-2 handfuls of sultanas 🍇
1 handful of crushed walnuts (optional)
3/4 cup of grated carrot 🥕


1. Preheat your oven to 180 degrees Celcius

2. Place cupcake liners into a muffin tray

3. Combine all dry ingredients into a large mixing bowl and set aside

4. In a separate bowl combine all liquid ingredients (including carrot)


5. Mix wet ingredients with the dry

6. Immediately spoon the mixture into the cupcake liners and place in the oven

7. Bake for 30-40mins or until a wooden skewer comes out clean

Cream Cheese Icing
150g Cream cheese
1/3 Icing Sugar 
30 g Butter 
Hand-held electric mixer


1. Melt the cream cheese and butter until just soft

2. Using your hand-held electric mixer mix the cream cheese and butter together

3. Slowly add the sifted icing sugar

4. Stop when the mixture is a nice spreadable consistency

5. Using a spoon or a piping bag, ice the cupcakes

6. Decorate with grated carrot and crushed walnuts

7. Put the kettle on ☕
